Sur Lie Method

“Sur Lie” is a winemaking technique in which white wine is aged on its lees (spent yeast cells) after fermentation.

In conventional white winemaking, the lees are removed shortly after fermentation. However, with the Sur Lie method, the wine remains in contact with the lees during aging. This process allows amino acids, polysaccharides, and other umami-rich compounds to be extracted into the wine, enhancing texture, complexity, and savory characteristics.

As a result, wines made using the Sur Lie method typically display greater richness, depth, and a distinctive umami-driven character.

About the Winery

Founded in 1890, Marufuji Winery began as a small winery established by Jisaku Omura in the garden of his family home. Today, the fourth generation of the Omura family continues the winery’s dedication to crafting high-quality Japanese wines.

Marufuji focuses on traditional Japanese grape varieties such as Koshu and Muscat Bailey A, with the ambition of producing world-class Japanese wines. While considered a boutique winery, Marufuji is widely recognized as one of the pioneers of the Koshu Sur Lie style, helping to define and elevate this distinctive expression of Japan’s signature white grape variety.
