About Brewery

We are Kubota Sake Brewery in a small town in Fukui Prefecture. We have been involved in sake brewing for over 260 years. The beginning is Horeki 3rd year.“The Lost Muromachi Period: Revisiting the Legendary Sake of Echizen Toyohara”It was an order given to the Kubota family by the Echizen Maruoka feudal lord at the time. There are three things that make Kubota Sake Brewery unique. The first is the groundwater that springs up from this land. The second is sake rice grown in-house in paddy fields with water quality similar to groundwater. The third is to make high-quality and stable koji. The taste of sake is determined by 60% koji, 10% rice, 10% water, and 20% skill of the maker. We have the experience and the confidence to speak deeply to all of them. Sake brewing is a family business that has grown with joy and sorrow along with this land. Maruoka-cho, where the sake brewery is located, is a small but livable town where people help each other. In order to keep this place comfortable to live in, we plant rice, draw water, and continue to make sake that can only be made in this place every day. Make sake with locally grown ingredients. Believe that it is the real local sake, We are still making sake today.
