This sake pairs exceptionally well with grilled ayu (sweet fish), a specialty from the crystal-clear waters of the Takatsu River.
It offers a delicate and refined aroma—not overly intense, yet expressing the elegant character typical of Ginjo-style sake.
On the palate, it presents moderate richness with a subtle hint of bitterness, creating depth and layered complexity. The balance between flavor and structure makes it highly enjoyable with food.
The finish is dry, clean, and refreshing, making this sake easy to drink and ideal for long meals without becoming overwhelming.
The Story Behind Fusozuru
In Japanese culture, the crane has long been regarded as a symbol of longevity and good fortune. The name “Fusozuru” was chosen with the hope that both the brewers and those who enjoy the sake would be inspired by the graceful image of the crane.
Just like a crane spreading its wings, the brewery hopes this sake will reach far and wide, representing the spirit of Japanese sake (Fuso) beyond Japan.
When developing this sake, the brewery did not aim for an overly flamboyant aroma. Instead, the focus was on creating a sake with rich umami and a rounded flavor profile, designed to complement food and particularly enjoyable when served warm.
Rather than producing a sake that is overly sweet or high in glucose, Fusozuru was crafted as a sake that can be slowly savored during a meal, enhancing the dining experience.
