Enryu Junmai Nama Genshu

Enryu (炎龍), meaning “Flame Dragon,” was born from the ambition of the people of Sakai-cho in Fukui Prefecture, a region long known for its fertile rice fields and rich sake-making heritage. With a shared desire to create a sake that the local community could truly be proud of, Kubota Brewery worked closely with the region to bring this vision to life.

Unlike the MAN collection, which focuses on elegance and modern refinement, Enryu celebrates the pure and traditional character of sake. Crafted as a fresh, unpasteurized, and undiluted expression, it delivers a bold yet refreshing experience that highlights the authentic essence of rice, water, and craftsmanship.

About the Brewery

Kubota Brewery Co., Ltd. (Fukui, Japan)

Founded in 1753 in Maruoka, Fukui Prefecture, Kubota Brewery is one of the region’s most historic sake producers, with more than 270 years of brewing heritage. The brewery is widely recognized for its flagship brand, Fukukoma, which has become a representative name of Fukui sake.

Kubota Brewery is dedicated to expressing the natural character of Fukui through the use of locally cultivated rice and pure underground water drawn from the same water system that nourishes the surrounding rice fields. This commitment to regional ingredients allows each sake to reflect the unique terroir of the area.

At the heart of the brewery’s philosophy lies the traditional principle of “Ichikoji, Ni-moto, San-zukuri”—the belief that exceptional sake begins with carefully cultivated koji, a properly developed yeast starter, and harmony throughout the brewing process. By combining centuries of craftsmanship with continuous innovation, Kubota Brewery produces sake known for its rich umami, clean structure, and refined finish. 🍶✨
