About Brewery

Aoki Sake Brewery is a sake brewery located in the Uonuma region of Niigata Prefecture, which is one of the most snowy regions in Japan. Since our founding in 1717, we have continued to make sake for over 300 years. Aoki Sake Brewery's sake, represented by Kakurei, is produced by the various blessings of the snow country and the traditional techniques of Echigo Toji. Among Niigata sake, which has a lot of “tanrei dry” sake, we aim to brew “tanrei umakuchi” sake that retains the original flavor of sake rice, and we will inherit that taste for the next 100 years.
The spirit of "harmony" that Aoki Sake Brewery values most in sake brewing. Good sake is produced through the harmony of the brewers, brewers, and farmers who grow sake rice, the sellers of liquor stores and restaurants, and the drinkers who love Kakurei. The idea is to be born.
Behind the harmony is the “spirit of endurance” and “heart of helping each other” unique to Niigata people. The spirit of harmony can only be established when we consider each other, consider each other, sometimes endure, sometimes encourage each other, and sometimes rejoice.
