The rice is polished to a higher degree than usual, then carefully brewed to create an elegant Junmai Ginjo style.

The Story of Bungo Meijyo Brewery

Bungo Meijyo began brewing sake in 1910 in Saiki City, Oita Prefecture.

Although sake production was temporarily suspended in 1984, brewing was revived in 2011 with a strong desire to preserve and continue the local sake culture of the region.

From this revival came the Saiki Hisho brand, brewed using rice cultivated in Saiki and water from the Bansho River, creating sake that reflects the distinct character of the Saiki area.

The Saiki Hisho lineup includes Junmai Daiginjo, Junmai Ginjo, and Junmai, each known for its rich rice flavor and regional identity.
