It exudes a sweet aroma reminiscent of custard cream, with pleasant notes of fruits like banana and papaya. The initial taste reveals a clear and robust sweetness, akin to crystallized sugar. The sweetness lingers distinctly on the tongue, accompanied by a refreshing acidity. The finish carries a touch of dryness and a subtle bitterness reminiscent of caramelization. The acidity leaves a satisfying tightening sensation in the mouth, encouraging further enjoyment of food.
Matching Food: Chicken – chicken thigh, chicken skin, yakitori, chicken cooked with spicey, sesame, teriyaki, or creamy mushroom sauce.
Enjoy chilled to 8-10°C. Small sake cups are recommended.
It goes well with sweet and spicy sauce and lemon. The compatibility with sesame is also good with beautiful acid.

Noto, where we live, has been certified as a Globally Important Agricultural Heritage System, I feel great significance in running a sake brewery here. At our company, we use Noto-grown rice for all of our sake, and natural spring water from the mountains of the former Yanagita village for the brewing water. It is our mission to enhance the appeal of Noto through "manufacturing of brewed sake".
Noto rice cultivated with local farmers, super-soft water that springs from the mountains of Noto Town. While appreciating the blessings of nature in Noto, the employees work together to brew sake. This is the commitment of Kazuma Sake Brewery, which has been passed down from generation to generation. In order to protect Noto's satoyama and satoumi, we are also working on "sake brewing from paddy cultivation" using abandoned farmland.
