It was created as the sake of wishing the ancient capital of Kyoto a thousand years. Kyoto is known as the "millennium capital" that has been the center of Japanese politics and culture for more than 1100 years. To make it suitable for Kyoto's Ryotei (traditional Japanese restaurants), the sake itself is less assertive, aiming for a mild taste that is easy to pair with meals.
