This junmai sake is brewed at a low temperature for a long period of time according to ginjo brewing, using all the locally produced Koshihikari rice from Kumihama. It is a very smooth and gentle flavored sake.

About Brewery

The northwestern part of Kyoto Prefecture, on the Sea of ​​Japan side, is called the Tango region. Many tourists visit the landscape of mountains and sea throughout the year, but Kumihama-cho, where our sake brewery is located, has the best white sandy beach on the San'in coast for more than 6 km and an inland sea separated by a sandbar called Shotenkyo. There is Kumihama Bay, and its beautiful appearance changes with the seasons to please visitors. Our sake brewery is located on the farthest shore of Kumihama Bay, and we named our sake “Kumi no Ura” because we can overlook the bay from the sake brewery. The junmai and ginjo brewed by Tatsuro Kakimoto, a brewery master who trained under a skilled Tajima master, are loved by people all over the country.

About Kyoto

Kyoto is located in a valley, part of the Yamashiro (or Kyoto) Basin, in the eastern part of the mountainous region known as the Tamba highlands. The Yamashiro Basin is surrounded on three sides by mountains known as Higashiyama, Kitayama and Nishiyama, with a maximum height of approximately 1,000 meters (3,281 ft) above sea level.
Kyoto sits atop a large natural water table that provides the city with ample freshwater wells.
