When served cold: Initially, you'll notice flavors reminiscent of creamy caramel candy with hints of fruitiness. Then, the sweet taste of preserved fruit and the smooth sensation of alcohol emerge. Interestingly, after swallowing, a bitter flavor and a hint of astringency on the tongue appear. It's the unique combination of these two distinct flavor stages that creates a rich and intriguing sake.

When served warm: At this temperature, the taste of Iwao becomes sweet and spicy. You'll perceive a rich, slightly sweet flavor, and a subtle bitterness that makes the experience even more enjoyable.

Among the brewing waters, Ayukawa underground water is an exceptionally rare type of hard water. Gohyakumangoku rice is polished to 55% and then combined with this natural hard water to create a refined junmai ginjo with a gentle flavor.
