This sake is named after “Ao Tenjin,” a pond located near the brewery that is traditionally believed to be the dwelling place of a Sacred Turtle, a messenger of the gods. The name therefore symbolizes wishes for longevity and good fortune.
Aged for more than two years, this Junmai sake develops a deep, mellow, and well-rounded flavor, which is its most distinctive characteristic. Brewed as a pure Junmai (rice-only) sake, Shinkame Junmaishu fully expresses the rich umami of the rice, resulting in a full-bodied yet smooth and balanced profile.
Thanks to its rich, full-bodied (koku) character, Shinkame Junmaishu pairs exceptionally well with bold, flavorful dishes. It is an ideal shokuchushu (food-friendly sake), complementing not only Japanese cuisine but also Chinese and Western dishes.
